Frittura d’animelle, & fegato di capretti con sugo di melangole, zuccaro, & pepe sopra.	lib. 8	piatti 3	A fry of kids’ livers and sweetbreads, served with orange juice, sugar and pepper.
Testicoli d’agnello arrostiti allo spedo con la corata serviti con sugo di limoncelli, & zuccaro sopra.	nu. 30	piatti 3	Spit-roasted lamb fries with the pluck served with lemon juice and sugar on top.
Pollanchetti marzolini affaggianati arrostiti allo spedo, tagliate la melangole in fette sopra.	nu. 9	piatti 3	Spit-roasted “March chicks” dressed like pheasants with sliced oranges on top.
Piccioni seza ossa ripieni stati in adobbo, & poi fritti, serviti con zuccaro, & del medisimo adobbo sopra.	nu. 15	piatti 3	Stuffed, boneless squabs, simmered and then fried, served with sugar and a little of their own broth.
